More than organic
Dating back to the early 1900s, this has been a family farm for generations. With a deep-rooted passion for small-scale organic grain farming, it is now at the forefront of modern quality farming, and of exceptional quality that is just waiting to be explored even further by bakers, both professional and domestic, for its superior health properties and taste.
Not only is Lauri-Jaani one of the first organic farms in the country, but also the very first to start growing spelt since the independence of Estonia. It’s a very rich grain, and at Lauri-Jaani every grain is milled by hand in a traditional stone mill to keep all the flavours and nutrients intact.
Set in Kiviküla, near Haapsalu in the Lääne County, these are rocky fields but intensely fertile and with a unique biodiversity. Peaceful and beautiful, this is a land that never sees pesticides or fertilisers. It is a testament to that fact that small artisanal farms can be sustainable and futuristic, and always with quality at the guiding star. Wheat, rye, barley, oats, peas are all sold at the farm, respectfully taken care of by Jaan himself, the youngest son in the family.
